Recipe: Brushetta Cheese Toast

I made these cheese toasts for dinner this week and wanted to share the recipe because they are so yummy and easy to make. I know it's been too hot to turn on the oven but these cook up in only a few minutes. Just enough time to melt the cheese. I had half a loaf of French bread that was getting hard and all the veggies in my fridge and prepared these in less then 10 minutes. They were a total hit and went great with our shrimp salad. It is just like bruschetta but with cheese and who doesn't love a little cheese. 

One loaf French bread
16 oz fresh mozzarella chesse
2 medium tomatoes diced
4 garlic cloves minced
handful of basil, about 8 leaves chopped
1 tablespoon of olive oil
salt and pepper


Set the broiler to high. Slice bread into 1/2 inch slices and place on a baking sheet. Slice cheese into a enough pieces so there is one slice for each piece of bread and place on bread.

Mix tomatoes, garlic, basil, olive oil and season with salt and pepper then divide the mixture between each piece of bread. Place in broiler for 6 minutes or until cheese and bread gets toasted. Enjoy!

I t toasted one without the tomato topping for my son.
